Kadale Puri Vaggarne - Turmeric infused Spicy Nutty Puffed Rice - Snacks (Kalle Puri)
One of my favorite evening snacks as a child. My mom would give this in a newspaper cone and serve us warm straight from the pan. The spices and turmeric in the tempering along with nutty coconut and peanuts, puffed rice snack would taste heavenly.
I love to use these puffed rice a few ways, to make our evening snacks interesting, just the way my mom makes.
Kalle Puri (as it is popularly known in Karnataka), brings nostalgic memories for all, who grew up in Karnataka.
This recipe is very easy to make and serves 8.
Ingredients
Brown Rice Puffed Rice - 1 Bag (Arrowhead Mills is a great option or you may find store brand in many grocery stores )
Turmeric - 1 1/2 tsp
Red Chili Powder - 1/2 tsp (Optional, only if you want extra heat)
Red Chillies - 3-4 (broken into pieces)
Coconut Flakes - 4 tbsp
Curry Leaves - 1 Sprig (about 10 leaves)
Peanuts - 1/2 cup (dry roasted tastes best)
Fried Bengal Gram Dal - 2 tbsp (Kadale Pappu)
Salt - 1 tsp (or as required)
Tempering
Ghee or Oil - 2 Tbsp (Optional)
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Asafoetida - 1/2 tsp
Method
In a large Wok, heat the oil or ghee on a medium flame and once hot add the tempering, mustard seeds, cumin seeds, asafoetida
And, once it starts sputtering, add the curry leaves, red chillies, turmeric, and fry for a bit.
Then, add the dry roasted peanuts, fried gram, coconut flakes, and fry a bit.
Optional, add the red chili powder if required.
When the mixture is fried well, add the puffed brown rice and combine well, until all the puffed rice is coated with the spices.
Add salt as per your taste and mix well and enjoy it warm in a personalized paper cone. ohh, what a fun way to enjoy a cold winter evening along with a hot cup if coffee or tea.
