Spicy Chili Paneer -A Vegetarian - Side dish
A great tasting spicy and hot chilli paneer, wonderful side dish for any special celebration. It can be made vegan by swapping the paneer with fried tofu. A very quick and easy recipe. Here it goes.
Ingredients
-Paneer 1/2 block or about 150gms cubed
-Ghee (or oil) 1 tbsp
-Carrot (shredded) 1/2 cup
-Onion - 1/4 cup, thinly sliced
-Serrano Chilies 10 ( you may add sweet / bell peppers cubes, if you like)
-Green chilies(minced) 1or2 Nos, Optional
-Schezwan spice mix - use as per the mix instructions (I used 2 tbsp (store bought) mixed in little water in a separate bowl)
-Salt to taste
-Sugar or honey - 1tsp (optional)
Method
1. Fry the paneer cubes (tofu coated in cornstarch should work fine, too), If you use a non stick pan you don’t need any oil/ghee or else use 1/2 tsp ghee, fry them in a well seasoned cast iron pan or stainless steel pan). Keep it aside.
2. In a pan add ghee and once it is hot, add the green chili’s (optional) and add onion slices and fry until slightly brown, add Serrano chilis (or bell peppers, optional) stir fry for 2 mins on medium to high heat.
3. Now, add the shredded carrot and fry for a few mins or untill the carrots are well cooked and turns slightly brown.
4. Now mix in the pan fried paneer and add the spice paste (add more spice mix and water if you want a spicy runny gravy). Combine well to coat all the chilies and cubes of paneer and stir fry for another 3 mins and done. Add the chopped spring onion to garnish. Enjoy!!
